Don't you use organs and blood in Russian cuisine? Blood sausages and using different cooked organs as stuffing is common here.

Stewed chicken liver is uma delicia

Used to love liver pate with small pieces of pickles mixed in, but it isn´t sold here anymore.

That one is kept in salty water with garlic for a month, then it's smoked. Lasts years.

It isn´t produced here anymore, but it was my favorite pate because I don´t like liver too much and it had a nice mild taste.
