Different regions have different cuisines
Andhras make great food. Although me mum makes the best food in the world. Only mum's mum makes better (we're north Indians)

I think fish dishes could be more southern?

It's pretty much missing entire South indian and Bengali foods
I think this menu might have been from a punjabi dabba(restaurant) that would explain why other indian dishes are missing

I once tasted dosai and appam which are said to be south indian dishes. They tasted amazing

I think you might be referring to better off Indians who don't have to walk everywhere but still eat as if they had to

Dosai and idili are the staple food of entire South India
Most malayalis eat appam , tamils eat panniyaram
And so on
But dosai is probably the only food all have in common

They probably eat tons of sugary sweets.

I would taste it if I could, but there are no indian restaurants

Maybe you have access to an Indian store?
Check take aways too, a couple here do Indian dishes (which are probably not that good but you'll get a taste).

Basically
In the past, most Indians would work very physically taxing occupations and to sustain such a physically exhausting state, we would eat high carbs and it would balance it out and give us enough energy to work well.
Now, everyone is working office jobs but the food hasn't changed, it's still the same so we get fat pretty quick.

This one is pretty much same as the Other one but this one catalogue has a better "selection" of dishes
But then again it's just my opinion

But I presume they serve chutneys with the appropriate "dishes" ?

If you haven't eaten chutney the Basic Chutney starter would be coconut , chilli-pudina and tomato chutneys it's in red , white and green color an D pretty much eaten with any main course these are the basic chutneys
I also noticed that all these menu's Lack briyanis
YOU HAVE TO TRY BRIYANIS atleast once doesn't matter which one you eat but try it ATLEAST once
My favourite briyani is Hyderabadi Briyani
Most commonly available biriyani however would be Mughal or Dum briyani

No, they have bowls filled with 3-4 chutneys next to the buffet line. The other restaurant does it too, but they just bring a little tray with 3-4 different ones to your table.

I've made Briyani myself :-D The naans are unfortuneately shit at the buffet place.
