What restaurants did you go to? I hope you tried something else than fish because that's not really representative. Fish in Stockholm isn't the most fresh either because most of it comes from the west coast. Nordic cuisine is generally limited because historically nothing really grew here, but we've made a huge leap in recent years. New nordic cuisine is top tier and this is showcased in the ever growing list of michelin restaurants popping up.

Same. Japan copies a lot. And then produces delicious Japanese version that is at times better than original, but not much true original plates.
Also grande cuisine is not what the every man eats in Mexico. I'm not saying everyone there eats breakfast burritos with egg/potatoes/bacon/cheddarcheese/sourcream but the average man eating some bread with some coffee & milk doesn't make Mexican food god tier either.

In America, Brazilian BBQ is a high end buffet where they have veggies, cheese, and other sides at a buffet bar. Then the kitchen roasts skewers of Brazilian meat and brings them out on the skewers and cuts portions for you to your liking.
I don't think this is common in Brazil, but is this just an American meme or do you guys eat that sometimes?
