Quebec has a lot of great places to visit. You could easily spend an entire summer exploring that province.
As of now I have a cabin rental for a week in Victoria Beach, Manitoba, so I will start there. I want to relax for THAT portion of the trip, but after that, I have two more weeks, and that part remains undecided.

I'll be taking more of a "road trip" once I leave Victoria Beach rather than an urban tour. I want to stop in smaller towns, see the local summer festivals, that sort of thing. The last time I was in Canada, I was in Toronto, and didn't see too much of the countryside. It was interesting for a tourist, but I'm glad I'm not trying to save up to buy a house there.
can't you do all of that in America though, you have the entirety of the midwest that is much bigger and much better than anything you can see here

There actually ISN'T anything quite like Victoria Beach in the US; certainly not in the midwest. A large portion of VB is closed to cars in the summer, and is basically a bunch of narrow, quiet gravel streets connecting a bunch of cabins and some small stores next to Lake Winnipeg and its beaches. I visited there ONCE when I was younger, but we didn't stay overnight.
If the train to Churchill is in operation this summer, I might look into that, too.
Canada is a different country, though. I really can't substitute that with the US. Different landscapes; different cultures, different history.
well I cannot stop you from coming here, there are some different things but honestly its just a watered down version of your country. trains here are also ridiculously expensive so I would not consider doing that unless you got some kind of discount
