The Pereh is more valuable as a vehicle to target than a tank (or your average missile AT vehicle), and they have worse armor than a Merkava. So you don't want them getting shot at.
Plus the weapon system involved, the Spike NLOS, was heavily classified and a cut well above something like a HOT missile. The Israelis wanted to deploy it, but not have the enemy know too much about it.

they'd stay away from a tank but when you see a tank on the battlefield you expect something that can get you at ~4km with line of sight . if a syrian tank\AAA battalion got within 25km of a pere we could basically erase it with precision guided missiles from behindmountains\hills\cities before they could even react where's they didnt think we had anything other then inaccurate conventional artillery and planes that could get to them.
the whole pere program was designed as a reaction to the battle of the valley of tears where the syrians really invested in anti aircraft weapons after we demolished them in 67 and shot down many of our aircraft so it was mostly an armor battle.IDF needed the precision long range anti armor capabilities of the airforce but the ability to operate freely in areas with heavy enemy AA presence. this can also be used to target enemy AA and enable the airforce to move in afterwards.
