I'd put the focus mainly on France and Italy, plus a few Eastern European cities like Prague and Budapest.
Don't skip the touristy cities like Paris and Venice, they are absolute gems. Check out Ghent in Belgium too. The south of France is beautiful, literally any city, town or village there is lovely, same goes for northern Italy. Switzerland, Austria and Slovenia have amazing countrysides and lakes.

If you stay away from the gothic area during the day/plaça catalyuna you will hardly see any tourists. The amount of cheap, high-quality food in Barcelona is mind boggling if you actually look for it.
