In the middle and modern ages I doubt the average French lived that much better than the average Portuguese and Spaniard. Their kings and priests likely did though, and having a large population fore sure helps (although the population is probably caused by better lands, since Spain is mostly barren, they never grew to the same size).

Spain is a desert, Portugal is too small in land area and population, and Italy is too mountainous. All three were also well off at some point in history due to resource rich overseas territories and their additional manpower.
