How do they read the kanji though? With an unfamiliar word, you can you attempt it phonetically

Kanji means something when it's used as a verb, adjective, adverb, noun etc. A certain Kanji on its own doesn't mean something claerly.

Most characters have an element which indicates the reading and an element which indicates meaning. So yes, by their radicals.
