We write Č, Š and Ž because the sounds are radically different from C, S and Z. Writing E and O with accents only changes whether the two vowels are pronounced narrowly or widely so they're not written.

Half the unique sounds that other Slavic languages use sound the same to me, like you couldn't just use the same letter for sz, š and ś.
