I am a Brit in Australia using a proxy. I can't tell you much about Tasmania beyond general knowledge or what I've heard from people. Most coastal places in Australia are generally cooler than you expect, barring occasional heat waves. The extremes are inland.

I've moved from a city in the UK to a rural area in Australia. It is boring out here and I don't plan to stay where I am for a long time, but it's my partners hometown so it's been easier to settle where she already has roots. Financially I do much better here, lower income jobs are much better paid than in the UK. Prices here are different. Fuel and meat for for example are cheap but day to day household goods cost more. Where I live work has always been easy to find. I'd imagine it's even easier in the cities if you're eager. House prices in the big cities are ridiculous though (Sydney/Melbourne)

You'll get loads of banter from them. It depends where you are, there are huge grain regions that are dry all summer but come to life in the winter rain. Up in Queensland there's lot of tropical fruits, sugar cane and cattle farming. Deep inland NSW, SA, WA, NT all have cattle ranches over huge areas, they require loads of grazing room with it being so dry. South Australia grows a lot of wine grapes for domestic consumption plus export. I assume colder climate/European fruit and veg must be grown mainly in Victoria and Tasmania, but I don't really know. There's that many climates here that nearly everything is homegrown and huge quantities are exported with so much land and so few people. Tasmania has fisheries, forestry and is up and coming in white wine.

There is lots of agricultural work in rural NZ, but if you don't want to do that, you'll probably have to move to cities. I can't speak for North Island, but in South Island there are two big cities (Dunedin and Christchurch) and two small cities (Invercargill and Nelson). The 2 big cities are shitholes while the 2 small ones are reasonably comfy.

From what I've seen from my trip in sussex, this looks like british farms. In another scale I've already seen cattle driving with helicopters in straya so.... it could be a mix between enormous farms and smaller ones and that's really cool, people might buy locally which is very smart.

Our dairy industry is huge. Small farms don't really exist here anymore though, only mega farms. I have no idea how easy it would be to get rural work in Australia, however I know overall they have more work there, which is why so many kiwis move there. If you want to work in the dairy industry, New Zealand would be your best bet by far. We produce a significant percentage of the world's milk despite being a small nation.
Rural industry basically relys purely on temporary foreign workers because they don't need to be paid as much as Australians.

I don't know the specifics, but I do know that we are easier to immigrate into than Australia across the board. Even though the new govenrnment tightened immigration criteria, immigration to work on farms is still soft because our economy relies on agriculture.
Someone I know owns a property out in rural Victoria and it's nice out there.
There's a Swiss bloke who built his house by hand with his brother and can stay completely off-grid in terms of electricity, heating and water. He owns quite a bit of land, a lot of it bush, but also grows all his own fruit and vegetables, brews and distils alcohol, is constantly preserving meat or pickling something, hunts for meat and for a hobby, raises a small number of livestock for dairy and eggs but mostly for onsale.
There's a core of locals, mostly in or near town, who have been in the area for generations but there are also a lot of people who have moved there and have a lot of privacy and quite comfortable lives. I guess you might have trouble getting work since a lot of it is family farms or foreign corporate-owned lumber mills but there is stuff around especially if you're not fussy; most young people leave because they want a long-term career but if you care more about the lifestyle then you can definitely make things work in that sort of region; costs of living are quite low.
It can get hot but it's one of the coldest parts of the country; they sometimes have white Christmases there.
