It depends on what your goal is. Arabic is more exotic, but Russian is easier (because it's Indo-European). Russian is more widespread, but Arabic has more speakers.

Russian is easier. I'd say Russian since I am learning it too. With Arabic, there are like 4 Arabic dialects that you would have to learn if you are interested in areas outside of the Arabian peninsula. Essentially, on top of learning the script and shit, you would have to learn another 4 languages on top, though I'd use the term 'languages' very loosely since the difference between the dialects is like the difference between English and Scots. But what do I really know? I'm just another monolingual bloke like you.

I have heard that classical Chinese has extremely simple grammar rules and thus many complicated concepts can be combined into extremely short structures, if that's the sort of thing you're looking for. For langs that are still spoken, yeah I'd guess something like malay/indonesian would be your best bet.

The problem with that is, the chance of there being subtitles in your target languages for a particular movie in that language drops to 0 really fast the less popular the language is.

This does not improve your listening skills. Most people are better at reading in their TL than listening. When you do this you're basically just reading. Read the Untertiteln separately and then watch without them. Many fall into this trap.
