They vary but I've pondered avenues from wood working and selling the decorative items online to opening a burger joint. The former is risky as I would have no idea if my work would be salable and the latter would have me manage to get enough clientele locally (a dying 20k town) to make a profit.

The burger joint is realistic, those never fail. To start a burger joint in a balkan shithole you only need a space rental - something like 200-400e a month for ground-level "office" stand and 500-1000e for supplies for food.
This is hard to start as a dead-broke man, get a job as a truck driver or work abroad for a year, save up a good 20k and then come back to Bulgaria and start it. If I were you I'd start applying for dead-end jobs in Europe now, get a solid offer and quit the current job.
