Yes, they are overpopulated, and most species here are invasive. You can catch 100 per day with no permit. You can literally just go to a stream with a net (or bare hands) and start putting them in a bucket. People do this all the time. But they breed so quickly that there are always more.

When I was young I used to go to a sailing club with my parents.
I found out that crayfish used to hide inside holes of bricks in the lake. I used to play with them and then release them in the water.

Now I remember that and realize the bricks were probably a trap someone who live by the lake put there to eat crayfish.

Other than that I've never eaten crayfish or seen someone do it.

I love them, but like all fish, they're very expensive here so I don't get to eat them very often

It's usually people who didnt grow up with it, their mother cooked it terribly, all they've eaten is like canned fish or I've noticed that a lot of people arent skilled at selecting fresh fish.
