I am from the Saarland, so this is a regional dish I like a Lot. They are called "Hoorische" which is local dialect for "hairy ones" because they are pulled etc, as potato dumplings are. Sometimes they are filled with liver-Wurst and they are pretty Nice with a bacon/ham and cream sauce and some Sauerkraut.
Ps: also onions in the sauce.
Usually not a big fan of dumplings but liver sausage sounds nice

i'd say no. french and german wine in general are not as sweet as greek wine, but there are both good lovely and dry wines in both france and germany. in fact, they have a lot in common, because french and german wine regions are not that far apart. of course, germany doesn't have southern grapes, whereas france has in their more southern wine regions.
