Distilling 100% ethanol is possible, but the second it comes in contact with air, it will absorb water from it and will no longer be absolute ethanol.

You can make 100% ethanol (or at least as close as you're possibly going to get) by using molecular sieves, however once you remove the sieves, you will slowly gain water back into the solution.
