Best wing recipe: trim as much skin as possible. Lightly coat in flour/starch mix. Bake at 450. Pull out when close to down. Sauce in pan already hot, toss with wing, finish in oven 20 minutes.

you generally want to get out with lots of time to expiration left so you recoup some premium. You don't really want to try milking them.

I'll probably get roasted for this, but hear me out. I believe that India and China aren't comparable. In China, despite there being a lot of inflated numbers and shit, it's still a highly centralized administration with a well oiled bureaucratic machine. Yes there is still lots of corruption that is against the party line, but the most egregious offenders eventually get jailed when it becomes an embarrassment for the party.
India on the other hand is like the Wild West. My opinion of India as a place to do business was irrevocably damaged when I found out that the reason the Formula One Grand Prix ceased there was because some local government authority, trying to get their fingers in the pie, wanted to tax the F1 cars as road cars.Apparently every local authority seeing rupees just pulled this kind of shit, to the point where Formula One and Bernie Eccelstone, the man who was totally cool with running a Grand Prix while there was Arab Spring protests and human rights abuses going on in Bahrain 1 hour away from the race finally conceded to the teams and prematurely ended F1's run in India.
Just for comparison, there is still a Brazilian Grand Prix, a Chinese Grand Prix, I expect the Russian Grand Prix will continue for many years. maybe I'm extrapolating this one data point too far, but it strikes me that the syncretic nature of India's administration just makes it a worse place to do business than China.
