Sounds underseasoned. My preference is to give it a salt and pepper rub (needs more than you might think) and then leave it out at room temp for about half an hour (depending on thickness) before cooking. The temperature allows for more even cooking, and letting it sit for a while with the salt allows it to penetrate the meat via osmosis or whatever

that may be the issue, i do like steak if there's something like mashed potatos and gravy, or even just gravy to scoop up with the steak, but often when i have been to dinner parties and such the emphasis is on the steak, and eating it on its own - often with nothing saucy and flavorful to really accompany it, i honestly kind of wonder if these people even like the steak or are just pretending to as some sort of status symbol signaling, kind of like how people pretend that various alcohols actually taste good, despite them all tasting kind of bad and the only real reason to drink them is to get drunk

Most people aren’t very good at cooking/grilling. I basically never buy steak at restaurants anymore, even very nice ones, because I’ve been consistently disappointed compared to what I can easily make at home

There’s something to be said for simplicity and actually being able to taste the meat on its own, but that’s only really worth doing if it’s prepared well and you’re eating a high quality cut of meat to begin with. Getting one that’s nicely marbled, grass fed, etc makes a huge difference; having enough salt does the same. Beyond that you don’t really need much, if it’s done right
