There actually isn't a wide rnough list of 'ancient' civilizations to pick and choose from so I feel quite limited in my options.

Given there's only Greece, Egypt, Mesopotamia, Persia, India and China all regions I'm not too fond on I'm going to have to go with none.

The Mayans are an interesting case though, El Mirador in the preclassic was bigger than most later centres, while the classic period didn't really produce any centralised cities unlike Teotihuacan or the postclassic period

Yes it does. It means people can be assigned jobs other than finding food, and people will start to have societal roles like carpenter, architect, soldier, etc. A smaller part of the society will be cultivating food. That's how civilization is born.
