Onions go well in an omelette but I like to have other veggies on the side

I like mine with cheese, ham or salami, bell peppers and onions, then serve it with a tomato or two on the side along with some toast.

I like putting sausage and cheese in mine.

Here in Visby there's a really old place that serves the "Kings Omelette" and it's really good.

Damn, I used to do that. Doesn't taste too good in my opinion. You can't really get a fried surface on the pieces and the whole thing just tastes like egg white.

And it can be dangerous if you eat high amounts of it every day thanks to oxalic acid but you need to eat ridiculous amounts for that.

We don't do that, but my sister in law, who is also my ex wife used to put mustard on hers

Just seem like the pieces aren't getting the prime time frying they need. I hate it when the pieces are too soft and lack a surface, which usually happens when you fry them in a pile.
