It's just natural course of things but how exactly it become a meme about healslut - idk. But even when i started playing WoW in 2007, there already was a saying "healing is for girls". Which is also natural, because:
1) It's often easiest role in group.
2) It's a "caring" role, when you are not attacking enemy and not protect your buddies directly, but rather support them from a rear.
I think that at some point it just naturally evolved in healslut meme.
Detected zoomer here, it's the opposite - Mercy was clearly inspired by image of caring girl-healer who want support her teammates.

i always healed in raids and i was unironically the most chad in my last guild. tanks are on power trips driven by insecurities and dps are ignorant psychopaths who think they're still better than everyone else
