Problem with liver is most people generally don't know how to prepare it well. Based on how you cut it and preparation time can make a difference between eating cardboard and raw blood.

General organ preparation ignorance. Although, as far as entry organs go liver is easy. Tripe is where you separate men from boy. Also another case of where preparation is key, particularly whether tripe has been blanched beforehand.

Soup is good, but I prefer to just wrap them up in foil and low to medium heat oven like 6 hours until it even the gelatin/hard parts become soft...
