Sounds interesting! I was 30 before I had my first potato pancake, so I don't know much about ways of serving them.
Here we mostly used to eat them with sourcream and dill or bechamel, or pork cracklings. Or some mix of all of them.

The only recipes I can think of that have eggs, are some soups, where you mix egg and lemon. And I can't think of a single recipe that has hardboiled and diced eggs.
