I have digestive issues and get shits from spicy foods (which sucks because I love them), but that sounds like your system is really weak. Usually I get the shits several hours later or the next day, not right after I eat

That is sorta what they do, however I wouldn't say "hardly ever spicy", they use a lot of spicy salsas and they have spicy moles too.

What's annoying is when Mexican places here in New York make certain things super spicy even when they're traditionally mild, to come off as being more authentic to boomers who think Mexican food is supposed to be spicy as fuck. Indians do this too sometimes, I got Tikka Masala from an Indian restaurant in an Indo-Guyanese neighborhood and it was spicy as fuck, I guess to appeal to the Indo-Caribbean population over there.

Indian food (in the West at least) seems to have a wasteful quality to it, you're left over with a huge amount of curry that you can't really do anything with

All of those are easy to find even in suburban areas though. Unless by Western Chinese you mean like Xinjiang food

My favorite is X'Ian, but yes Szechuan is common in suburban areas where there are Chinese. However NYC has a great combination of diversity and density in terms of food. So you can try something new every day without even needing to drive.

Next time I'm in the city I want to try Yunnanese
