Northern European food is rich in meat and dairy products which taste alright by themselves. Southern European food have mostly carb stuff and require extensive cuisine with herbs, vegetables and spices to make it edible.

Southern Europe had access to more and richer ingerdients because of location and climate and therefore developed a richer food culture.

Southern Europe historically had access to more spices and a climate well-suited for the growth of crops that would be harder to grow up north. Geography helps define cuisine and the ingredients available. The south was also more geographically connected with north africa and the middle east via the mediterrainean sea, from which exotic ingredients and recipes would be exchanged.

There are no fucking people in northern Europe so nobody knows that our food exists. There are more people in northern Italy that in northern Europe and due to our climate our food is made to be functional and made from stored ingredients during the winter since the ground is frozen for most of the year.
