we dont have japanese grocery stores but i might find them in Finland if i preorder them straight from finns or just boil ''Muikkus'' a similar small fish native to Finland.

after you cooked a basic fish broth, add some soy suace on it that is called an Udon Dashi.

yaki udon is easy to cook. you dont really need any special japanese seasoning. try it. its also good with some red pepper

These sardines are made of drying them up under sunshine heat, I do not know how do you people made them, I guess it would be perfectly fine unless it was cooked to aware of bad hygiene.
