I have, on different occasions and for wildly differing periods of time, tried to learn German, Norwegian, Hungarian, Japanese, Korean and Mandarin. My main problem has just been sticking with it, as I have no one to practice with and I'm not in a financial position to afford lessons or a tutor.
For someone who can't immerse themselves in the language, what are some tips to keep motivation up? Am I just not disciplined enough for this?

It seems like almost all internet language learners struggle with this. It seems like having a close long-term connection to someone who speaks the language fluently would be the best way of maintaining motivation to learn it. Preferably someone you see regularly, like a classmate or close friend, so you actually get to practice it with them face-to-face.
I find that I hate not knowing what other people are saying, so increasing my exposure to a language generally also boosts my motivation to learn it. (So, for example, the more anime I watch, the harder I find it to not study Japanese.)

Well, I'm trying to get a job as a travel agent, so learning Mandarin or Japanese would be the most useful for me as an Australian, and would make me a) more employable in general and b) more likely to negotiate travelling to said countries on paid exploration trips for the benefit of the company. I have barely listened to any music for either of them, but I have watched a good amount of Japanese films and anime.
I tried learning Korean because I had an interest in Korean cinema for a good many years, and also because I feel that once the Koreas unify (and I believe they will within 30 years), Korea will become like a new Japan. Also, Hangul is my favourite writing system aesthetically. Not so much with the music.
Norwegian was to impress a frienemy/fuckbuddy, Hungarian for family, and I listen to a lot of Rammstein for German, and have watched many German films.
So what you're saying is, further immersing myself in media might be the best way to go. Sure, alright. Got any suggestions for any of the languages above?

I had something like that for Norwegian, she was a linguist and fuckbuddy/frienemy, so I wanted to learn her mother tongue or ANY language to impress her after hearing her speak it at home. Practice was way easier then. Not so much now.
I guess I'm similar in that regard, except instead of hate, it's curiosity. I want to know what everyone is saying around me all the time. And yet, it isn't enough at this point, because I'm not constantly exposed to a single language. I guess I should try harder.

Maybe 'hate' wasn't a great choice of words; it's curiosity for me too, but I think what really motivates me is the frustration that results from my curiosity being thwarted by lack of knowledge. I guess look for potential friends among groups of people who speak the language you want to focus on?

english grammar is too irregular and inaccessible for most people, most people dont give a shit about learning all the exceptions, and they dont have to with esperanto because its made for that, there are 0 exceptions. everything is nicely regular, making it very simple to learn. and honestly, im not very sure if its really to be attributed to simplicity or ease of learning that english is still a lingua franca, im pretty sure its really just due to US and anglo imperialism, mostly anglos. it couldve been literally any other colony language, just think about spanish for a second, they colonised all of southern latin america alongside the portuguese. spain also did a lot of colonising in asia, the philippines come to mind, they influenced local languages a lot, including tagalog. it couldve been spanish just as likely, but the british empire happened to conquer more. that may or may not be the only reason, its fairly unnuanced grammar only plays a minor role imo. not sure how much truth there is to this.
