Probably because we have more cultural projection. Argentina, Chile and Uruguay are just wannabe Europeans with very little culture of their own, so they're irrelevant from a "latino" perspective. Peru, Bolivia and Ecuador are unique but we just see them as more Native American rather than "latinos". Most gringos don't even know Paraguay exists. Venezuela is basically Colombia but Colombia has much bigger cultural projection. I don't know much about Central America.
