I'm studying Humanities. It's very varied and not at all focused on a single subject. I fear for my future; my lack of will to commit to a single course might have doomed me to a life of mediocrity from which there will be no escape. I don't even know what jobs prospects I will have outside of education; I only picked it because it meant I wouldn't have to move out of my parents home and I was interested in it, but I easily see myself out of a job when I'm done.

Sounds neat. My grandfather was a beekeeper; he had to travel around on a shitty bad with a bunch of bees up and down the mountain. That's what they are called here; it's a catch-all package that includes the study of different historical periods, geography, philosophy, literature and linguistics. I suspect that its lack of specialization is going to fuck me over in the long run.

Organization management bullshit. I'm doing my thesis now at some sort of community organization which mainly employs social workers who need an internship.
I thought it would be a change for the good since I'm used to working at commercial institutions and now I'm surrounded by young hot girls but instead they're the lamest and fattest people I've met in my life.

Spain is on the decline and only going to get worse. The only way to literally not starve to death in my old age is going to be saving as much cash as I can; looking at current population trends pensions won't be a thing here by the time I retire.

I feel that I will always be lagging behind everyone else on whatever field I'm competing. Specialization is very important on the 21th century, or so I've been told like a million times.

It's only my first day and I'm already doubting what the hell I'm doing.
A classmate of mine, when hit by it (he was studying Engineering) switched his major and got into Humanities. He seems pretty content; maybe you need a change of perspective.
If that sounds too radical for you, how about taking a sabbatical year to figure yourself out? Either to take a long reflective break or to get a job, try to do something else with your time that you might enjoy more.

If you'll take my advice, lectures are mostly useless. The only thing you learn is what you read yourself. Read a lot.

How about getting other people to talk to them for you? That should give you even more data, specially if the interlocutors you select to approach them are varied.

I already do, but I have a problem sticking to a subject for enough time as grow familiar to it. Plus, it's always good to have someone to talk to about what you read, which rarely ever happens otherwise.
