It's hard to estimate since some people have more or less than the standard eight. A thousand operators globally is still a much faster adoption rate than Freenet or whatever charity project you can find.

Excel doesn't store blockchains. There's multiple copies of the ledger on various nodes and exchanges that all sync in a centralized manner until consensus is released. If there was tampering with the blockchain, exchange accounts would be broken.
