In a way this is the answer. When a smartcontract needs off-chain data, it won't have the API provider as part of its own code, but will instead be calling another smartcontract created for the purpose of retrieving the kind of data you want.
So an oracle works by having on chain contracts which retrieve data and having the off chain nodes doing the work to give back the data to the on chain contracts.

hmmm I don't see it working this way. Let's say I have an insurance contract who's input is the temperature at a specific street corner at a specific time. What would stop someone from publishing a job for that contract AND owning the thermometer as well? I'm very sure that specific API's will be specified in the service agreements.

Nodes will decide what data they'll be fetching and from what apis, before 'launching'. You seriously thought just running a node would do anything? And that requesters would be able to request any type of data from any running node? No, you will be choosing nodes based on the type of data they chose to provide. The idea for cases of conflict of interest is that all of this stuff is publicly available info- What’s the contract code actually doing? What is the scope of the data the contract is sourcing? Is the data source sufficient to carry out the contract in a fair way? Most people don’t have time to dig into that stuff, but any contract getting attention is going to get found out if it’s fraudulent
