But 27 + 2 is adding together how much the guys spent plus how much the bellboy took, which is not a meaningful arithmetic. The room cost 25, but the bellboy charged them 27, and kept the 2, so everything makes sense.

I was about to type that but the ruse is not there. The trick is trying to make you count from 30 to 27 and back with only 5 dollars(you'd need 6) instead of making you count from 30 to 25.
