You need high volume with almost no downtime to make it work, or have a small slice-shop in a high-foot traffic bar neighborhood.

No he's right. Sausage isn't something they focus on and it's either gonna be the good stuff or pre-frozen bits of bone and garbage. I hadn't thought of it before but the sausage determines generally how quality the ingredients are. You can't fake good sausage and bad sausage is very evident.
