Give your 4 weeks notice and then come in at 10 go to lunch at 11 and come back at 3pm for 1 hr every day until the day you can take your remaining PTO and not come back until your exit interview.

Also my new employer has confirmed my new start date by email but not given me any formal documentation to confirm this, my contract of employment just states TBC on all the fields relating to start date.

My last/current place had me sign a start date letter and sent an amended contract of employment with the start date info filled in for me to sign again. Is this not standard practice? How am I supposed to have proof of my start date? My boss just saying to start X day over email seems a bit informal.
I as well signed a start date letter, scanned it and sent it back to the employer. Some employers do stuff super strict and others just have you show up and go from there. If you don't know when you start user, isn't the only thing to do is ask?
I do know when I start I'm just a bit concerned about my start date being "confirmed" by an email saying "yep that day is fine see you then".
A formal letter of offer with a start date, salary, etc. would be nice and would indicate that your new job isn’t run by a bunch of clueless wankers. Good luck!

I asked quite nicely, he responded saying he's never dealt with someone so difficult, and simply typed out "accept this email as notification your start date is the Xth of March 2019".

It's a company of 20 people, most likely family owned. It's probably going to be more informal than a 500. Get used to it.
If it’s a small business that’s one thing, but a formal offer letter is essentially a contract that you really do want to have. I’d say it’s a 6-8/10 on the red flag meter depending on any other vibes you’ve been getting.
