I told them I was going out for lunch but I was really taking a phone interview in my car and someone spotted my reading off my resume.

Never been a wagie but why couldn't you just say "My company fired me after they found out I was looking for better jobs"? Would this somehow make you look bad instead of making the company look petty?

You can say this, but you must say it as professionally as possible: "I've unfortunately been terminated due to my former employer not agreeing with my job searching activities outside of office hours."
But you can also go with: "I've decided to dedicate all of my current resources to finding a new, more prospective job.", thus leaving the previous employer from the picture. If they call the employer for a reference, he can't tell them shit like "oh, we've fired him because he was on the phone with you during lunchtime" or "we've fired him because I don't like the way he smells". It's not in their best interest to risk libel lawsuits, but most would rather stay quiet and say you were a good employee... the worst case: they would simply not give a reference.

Here's a hint, folks: employers can be and are douchebags. It's in their nature. They want to make money and you are just a vessel for that, nothing more. Thus, if you talk shit about your previous employer, your new employer thinks you're a rebel, a person who actually calls their shit out, and thus they won't like you. Hide your powerlevel.
