Would transferring the money to another wallet be enough? Claim it was a donation and that I don't control that wallet. Can the IRS seize crypto wallets?

Make your entry points and exit points as anonymous as possible. That means no Coinbase, nothing with your credit card, no KYC. Something like localbitcoins or a BTC ATM is what you want.
No they can't seize the wallets so long as you control your keys. But if they have one address on a public blockchain linked to you, they can just follow the trail.

if you've ever been serious about tracking wallet movements you know that current search tools are limited and this shit is very challenging to do beyond a certain point. unless you're the guy that just hacked 7k BTC, nobody is keeping track of your trades and even if they wanted to, they don't have the resources available to find out.
