My ledger finally arrived today. I wanted to connect it to MEW but MEW wants me to give them my private key. Why did I bother getting a hardware wallet for maximum security if I'm just gonna have to hand out my fucking backup phrase anyway? Is this safe? Do you guys do this?

you need to use ledger live to set up an ethereum app on the device and then when you connect to MEW, open your ledger and go to the ethereum app and it will sync up
I wasn't planning on it. Why would a service like MEW of all things ask for one?

OP it wants you to sign the transaction, your private key never leaves the chip. You sign the tx offline, and you give the tx to the blockchain and then it's public.
If your ledger's screen is actually announcing that your private key is leaving the device, then someone's trying to hack you
