The oil from the flower is extracted, and then heated up under deep vacuum to separate cannabinoids (and other compounds with similar boiling points). Terpenoids are ripped out very early in the distillation because they are very volatile, lightweight molecules.

Anyway once the cannabinoid fraction is distilled, terpenes are re-introduced to add back flavor, and to thin the oil enough that it will work in vape pens (It's basically solid at room temp)

The relative amounts of different terpenes in the flowers are generally what indicate sativa vs indica, but there's not really any evidence to suggest it means anything anyway. There's probably more to it, but indica/sativa is most likely a meme, imo.
