i suspect before actually going to the moon that we filmed a lot of stuff that was cut in as real for reasons. They probably would have used the fake footage to make the Russians nervous if something bad happened.

In a vacuum, hot gases expand without limit, and the hydrogen-oxygen flames of the boosters are invisible anyway. You can see the force of the booster tearing chunks off of the base of the lander. And with 1/6 of Earth's gravity, it doesn't take much to get to Moon orbit. Rockets need to lift their own fuel too, which increases the launch weight enormously as gravity increases. Earth is close to the highest gravity in which chemical rockets are viable at all, which means that the vast majority of a rocket's liftoff weight is fuel.
