Thats because drywall, or sheet rock as it is referred too over there, is 10 times easier to repair than plaster and much cheaper to buy in bulk. Yes, plaster is markedly stronger, but when plaster does get damage, its also very expensive to repair. Drywall/sheet rock can be repaired by anyone with little effort. So little effort that even if you don't know how to repair it, hiring someone to do it for you won't cost you half your monthy paycheck.

This actually brings up a good point. What kind of natural disasters do people in bongland face? Here we've got all kinds of stupid shit to deal with. Hurricanes, floods, earthquakes, tornadoes, windy conditions that don't even involve tornadoes that are still capable of ripping a roof off. All of these things will still strip down even a brick building, making the cost to repair these things quite high. This is probably why we've moved to using less durable, but cheaper materials over all.
Well, there's a few reasons.
Compared to the UK, the USA is a very young country. You'd be hard pressed to find a 200+ year old home here save for on the east coast. Remember, we didn't really expand across the entire mainland until the 1800s, and most homes that were built along the way were essentially basic protection from the elements until an actual town sprung up somewhere. Houses you find from this era (there are some where I live) essentially are field stone foundations, rough timber as floor joists, etc. Whatever was in the area was just cobbled together to make a structure, there wasn't any real attention to quality.
Homes that were built from the early 1900s-1970ish were generally built to last. My house was built in 1926 and is rock solid. Punching a wall here would likely result in a broken hand. The walls are a good inch+ of plaster and lath followed by a hardwood exterior.
Modern homes are what I call "cookie cutter houses". Mass produced with cheap materials because they could be marked up a fortune. Your typical $200,000 house really only costs about $40-$50k in material. I guarantee my house will still be standing when these pieces of shit are falling apart.
Quality homes are still built by select home builders, but you'll pay through the nose.

No, you can tell. The concrete window sills, the brick design above the windows, and mortar patching. It's brick. And dollars to donuts this isn't (or at least, wasn't) originally an American house for a family to live in. It's appears to be an old school or city hall, something like that. maybe even a post office. The American flag being displayed lends some evidence in that direction. (the building may have been re-purposed though).
Drywall is only the interior wall surface and it's cheap and easy to construct. Newer homes use wood frame construction with it, but many older homes that have been renovated have drywall interiors on top of solid wood walls.
Hollow wood-frame walls are cheaper, offer good insulation, and make modifying walls or running new wiring/piping much easier.
Basically the whole wood-frame method is a result of the invention of plywood. Before plywood all wood homes had solid hardwood walls.

The building materials usually suit the area. Wood is a perfectly good building materials if it suits the area. The quality of a house usually has more to do with the builder than the material.

The building looks like Colonial Revival architecture from maybe the 1920s. If so, then the building woult be very solid, probably mostly brick and concrete, with heavy timber and thick plaster inside. Any plumbing would likely be solid thick copper, heavy cast iron, and electrical eclosures would be steel.
