Don't know how it works in your country but here they ask you at the DMV if you want to be, then they put it on your ID. You could simply get a new ID, but this time don't tick the organ donor box on the application.

Organ donation is a terrible idea if you're planning on getting cryopreserved. Getting your organs harvested subjects your brain to ischemic damage and creates legal issues with the custody of your body, which decreases your chances of future revival.

Doctor definitions for dead are something along the lines of "there's nothing that we can do anymore" with various time limits on how long dead means dead. Brain death for something like 5 minutes is considered legally dead in Canada for example. Additionally, while the guy did put it poorly, you do need to be alive for organ harvesting, and I believe it is even mentioned in the Canadian Bioethics Companion(canadianbioethicscompanion.ca/the-canadian-bioethics-companion/chapter-7-organ-donation/) makes mention of many organs being useless after death, and what really constitutes death varies
