Tech companies talk to each other sometimes. Not like in a December 23, 1913 kind of way, but in a reactionary way.
When Apple changed theirs, it changed the way people communicate. Now when Android/WinPhone users use gun emojis, everyone using an iPhone saw water guns, and vice versa. Most likely, everyone followed suit to keep things consistent, because tech companies generally agree when it comes to tech standards (Unicode, SMTP, et. al.)
