Almost no one denies that the holocaust happened. Some people just doubt one or two claims about the holocaust.
For instance, it's claimed that 6 million Jews were killed in concentration camps. However no actual body counts were actually performed - so this number is mostly just an estimation. When you consider that concentration camps also housed political dissidents, prisoners of war, criminals, and non-Jewish minorities - it's more likely that 6 million people were killed in TOTAL, of which some were Jewish.
It's also widely said that concentration camps were nothing but torture camps. However during the early years of the war there's lots of evidence that prisoners were treated well, fed, and cared for. These weren't torture camps -- they were forced labor camps. And what good is a work horse if it's sick and malnourished? They wanted their slaves to be healthy and fed so they could work harder. It wasn't until the Allies cut off supply lines and food became scarce that they had to decide between giving the remaining food rations to their soldiers or to their slaves. And they chose the soldiers.
Even the mass executions didn't take place until the end of the war. When Allies started storming concentration camps there was a last-ditch effort to hide all of the evidence via mass extermination and forced marches. Until the last year of the war very few people died in concentration camps, and some people were even released after serving their prison sentence (if they were criminals)

German civilians were dying from simple diseases and starvation due to lack of medicines and food near the end of the war. If this affected civilians, why would it not affect concentration camp prisoners? And assuming it did affect them, why seek a more convoluted explanation for their deaths? Who benefits?

We know that there were 16,600,000 Jews in the world in 1939 (which probably doesn't take into account Jews who lived in remote eastern European villages), and that by the time the war ended, there were only 11,000,000 left worldwide. Also at this time, Jews still had a birthrate above replacement level.
The actual number of Jews who died could be anywhere from 5.5 million to 6 million, a number range which Jews decided to conveniently round up.
