We can't just let anyone have nukes.
Otherwise, the balance of power will mean nothing. The best thing to do is to keep certain countries from obtaining nukes since a country that has nukes can exert power without risk of nuclear war. If Iran obtained nukes, then it would have to meet with the US and Israel to negotiate trade relations, Israeli and US activities in the ME and that would put the US at an unfavorable disadvantage in the ME.

Ukraine was destined to fold as soon as it became autonomous. The leaders of the Ukrainian had a disagreements on the balance of power and that lead to Euromaiden and the Ukrainian civil war. It's in Russia's interest to build a autonomous buffer country as well as peace agreements so nukes don't start flying. The US and her allies is just trying to match what Russia is doing and turn Ukraine against Russia.

America is the richest nation on Earth by like 20 TRILLION dollars. You don't get to have that much more money than everyone else and not make some dangerous enemies. So we try to make sure those enemies stay weak. Nukes are the strongest weapon we have to date so it's easier if they don't get it.
