In Ireland, if you meet certain criteria you can own a rifle. You have to jump through a lot of hoops, such as be a member of a gun club, own a gun safe, get a police background check, but it's possible.

Look in to the laws in Denmark and see if you can get rifle.

Was any of this information provided to you? If so, then you can research what the specific conditions of the law are, that you've been charged with violating, and this way, prepare your defense.

My advice before hearing your answer: start collecting and printing reviews of this knife describing it's use as a bushcraft.camping tool. Since this was the purpose you bought it for, and you thought this was a legal use, you should have as many articles backing you up as you can get your hands on. By the photos it looks like one of those chinese knockoffs, decent knives for the price but if they have the brand name they are a counterfeit product.

Always remember the golden rule of buying knioves in Europe: only buy big knives (i.e. above the legal size) on the Schengen area.
From outside the fucks in customs will fuck you anyway they can.

For example here if the blade is above 10cm they try to make you get a police to take a look at it and clear it in customs, for the humble sum of 500€ (or something idiotic like that).
