If you have kids together and live together you're fucked in court whether you're married or not. At least with marriage you have tax and legal/guardianship benefits

Note that no prenup is ironclad, but you can preemptively take care of many objections that can be raised in a future dispute of the validity of the prenup. That's also something that routinely get's thrown out the window. The judge is simply allowed to throw it out at will if they feel like there was any pressure put on your spouse to comply and sign it (which they can easily lie about)
You have to be really sure that you like a girl to start a family, not getting married won't save you from divorce or child support if things go bad. Take your time and make sure she's the one. Typically a good relationship with her father and being somewhat religious (any religion) are good things to look for.

It varies, but generally divorce heavily favors the wife in western countries. In France they've actively banned paternity tests, even if you've used one and found out your child wasn't really yours and your wife cheated, that will be thrown out (you 'consented' to being the child's father, even though you didn't know that at the time), and you will be jailed for getting a paternity test as they are illegal.

Depends on what state you live in. Some states don't recognize common law marriage, meaning if you never signed a legal contract, she can't take half your shit or alimony. But some states do recognize it, in which case if you cohabitate with her for longer than a certain period of time the family court will treat it like you're married.
If you have kids with her, I believe she gets default custody unless you are married, in which case you have an equal claim to parenthood. You will have to pay child support either way. This might also vary from state to state.
That's how it is in US anyways. No idea how it works in Pastaland, but in general divorce laws in the West heavily favor the woman. From what I've heard (can't confirm), it's ironically Sweden, Norway, and the other socialist Nordic countries that have the least draconian divorce laws towards men, since the gov't just picks up the tab for everything.

Another option is to get married in a country other than Italy to a girl who's not Italian, and then fuck off back home if the marriage fails. As far as I know there's no extradition agreements over that sort of stuff.

You're usually right about that, but honestly with regards to family law it's been kind of a wash over the last few decades. Some states have made it harder for women to get alimony in recent years, and passed joint custody default bills. OTOH a woman can falsely allege abuse a lot more easily today. I'm not sure whether it's better or worse than 30 years ago, all things considered. But it's still pretty fucking bad.

Where I live, cohabitation is called a 'de facto relationship'. When a de facto couple splits, the courts treat them as if they're a married couple getting a divorce, so in that regard there's no difference between cohabitation and marriage. I would say it's best to look up the laws in your country/state.

Buy your home buy all assets in the name of the living trust. Get a prenup also.
