Here is the problem though. As much as I would like to believe in a loving god and all of that, "I don't know" is the best answer to those. My issue has always been that positing a divine being as the start doesn't actually explain anything.

You would object probably to the notion of "the universe just always existed." However, it is the same sort of reasoning as "God always existed and created the universe." Both examples can't be said with any level of certainty.

You can skip the whole OT if you want because its quite symbolical and very weird to interpet. MY advice would be to get a KJV New Testament and read it from cover to cover as it is quite short actually. The first 4 gospels tell the same story but with a slightly different meaning behind each one of them and then you'll see how the Faith had been spread by Paul(Saul) and then his Epistoles along with Revelations. The NT is a story of historical events and you'll learn the Truth from them. The OT is only relevant because all its prophesies until now became true and alot of them were fullfiled by Jesus Christ as some others are still to be fullfiled as of yet.
Now for universal truths you'll learn about what it means to Love and what it means to have faith. Jesus never spoke of religion but we made him one thus in the end its only the Belief in Him that matters. He is the best ethical teacher that humanity has ever seen(regardless of the miracles performed) , since he spoke for 3 years and changed the world for the next 2000.
