No one chooses whether they're white, black or asian, male or female. They are who they are and you are by definition, ethnically Ashkenazi.
According to the Numerberg Laws (I follow these) you are more specifically 2nd degree Mischling, not Ashkenazi. Also according to these Laws, anyone 1/8 Ashkenazi or less would be considered a full blooded German (assuming the rest is Aryan).

Mainly Ulster Scotts on my dad’s side and English on my mom’s, they both came over here to Virginia during the early 1600’s and ended up spreading across the southeast. My mom’s people had a bunch of nigs in TN until the civil war, one of the largest slave holding families in the state. My dad’s people were a mix of plantation and subsistance farmers in Mississippi and alot of them fought in the civil war, have three confirmed to have died during it. Two in Virginia, and one in TN. After the war my kin didn’t do a whole lot until the 1900’s when my dad’s people moved out to New Mexico and got into construction before moving back to Mississippi and starting up a big contracting company, his family stuck with it til my grandfather who moved up to TN before he died in the 90’s. My dad came up too and ended up meeting my mum and got married.
