I used to spend my summers in the countryside, where my grandpa was a vet, so he handled cows pretty frequently. I remember once when I was maybe 5 or 6, a cow injured him pretty badly, either from a kick or horn, don't remember.
So I guess they are pretty peaceful most of the time, but can hurt if they are in a stressful situation or in pain or something like that, even if you are a trained professional with years of experience handling them.

It's still totally salvageable even as a jpg. You should shoot RAW+jpg and just store the RAWs in case you want to dig up your older photos some day.. RAWtherapee is a free tool for editing them, it has a bit of a learning curve but won't cut into your wine budget.

Yeah, probably. Cows are totally chill if you know how to behave. The rules are basically the same as with every other animal:
1. Stay the fuck away from Mothers with Calves they are very protective and will attack.
2. Be vary of the bulls as they are protective of the whole herd.
3. Dont approach them from behind
In the alpine regions you will always walk around cows on the Almen, they are used to it and so are we.
