My high street used to have two greengrocers, an off licence, a fishmonger, a butchers, a bakery and three pubs.

Now it has a Wetherspoons pub, a huge Asda nearby (Walmart) and the high street is now filled with kebab shops, paki food shops and turkish barbers.

There are still bakeries here, but they also serve as cafés, most people who want fresh bread buy the bullshit bake-off bread from the grocery store

When I was a teenager I worked part time at my local big box store and when I was In the back I noticed back behind the bakery area there were people unloading frozen bread off a cart. That cart was defrosted and after it dried it went straight outside under a sign labeled "fresh bread"

A local milk farmer came by my house trying to sell his product and holy shit it was the best milk I've ever had. Only downside is the guy was charging $6/gallon. Double the price of supermarket milk.

If no one buys baked goods one month. Bakery goes out of business. Meanwhile Walmart still sold thousands of other products that negated any profit loss for the company. It only negated extra money.

In some part of Paris local shops are now closed because there is only airbnb tourists and not real citizens living there. My department accounts for roughly 15-20% total sales for my store. Of that 70% of of the sales in my department come from the packaged meat/cheese section and the remaining amount comes from fresh meat despite accounting for nearly 80% of my budget. Not a lot of money in having a fresh case, user.

I don't think buying is the problem, more like spending.
People waste money on travelling, drugs, alcohol, cigarettes, "going out", restaurants etc.

Their "fresh" bread was made the day before you get it in their bakery and shipped out on a truck the next day to their stores. Oh and their "fresh" pastries and cookies were all frozen and baked off as needed.
