Russia supplies nearly all the gas for electricity, heating, ect to europe. We are dependent on them for it. Russia controlling this wields them lots of soft power of the EU.
The EU have been looking to stop this Russian dependency and have looked elsewhere. Bahrain, Qatar and the UAE have very large gas and oil reserves which the EU and USA want to switch their dependency on. This requires a fucking huge pipeline which would run from the gulf all the way to europe.
To achieve this the EU needed to have built it through Saudi Arabia, Iraq and Syria to get to turkey. Saudi Arabia was already as NATO ally (Thanks 1st Gulf War) so that just left Iraq and Syria. Iraq and Syria would have both refused to build an EU gas pipeline through their country so had to be toppled. The first was Iraq in 2003.
Now comes Syria. This entire civil war is being thought over this EU gas pipeline. It is the only reason why NATO cares about Syrian civilians dying ect.
And now we are back to Russia. Russia knows that if this EU pipeline is allowed to be built, then the EU will stop buying from it, causing Russia to effectively lose its SUPERPOWER status and influence over the EU and USA. This is why Russia has intervened in Syria because it wants to stop this EU pipeline happening at all costs.
In conclusion the entire middle east has been a proxy war between NATO and Russia for the last 15 years at least. 2nd Cold War is here, and it could be about to get warm lads

I don't know but I would guess that it is due to the terrain and population density. Also, syria borders the coast south of turkey so even if it went through Jordan - Israel - Lebanon then it would still have to go through syria at some point.
